Fortini Lab is a contemporary pastry shop and bistro that combines family traditions with French influences. The establishment was founded in the 1940s by Franco and Giuliano Fortini, descendants of Mario and Faustina, who were known for their ice cream and pastries.

In 2014, Gianluca and Simone Fortini, cousins and partners, revitalized the family legacy, creating a space that honors their heritage while offering modern culinary experiences.
